LOBSTER, LANOUSTINE, CLAMS, MUSSELS SHRIMP, SCALLOPS IN A CREAMY SPICY GARLIC WINE SAUCE

This easy seafood bisque recipe is full of the savoury flavours of the sea – including lobster & scallops. It is also incredibly rich with the addition of heavy cream. The additions of dry white wine, cognac and a generous amount of fresh herbs and spices only elevate this dish further. This is a restaurant-style soup that you can easily make at home

Ingredients
  

  • INGREDIENTS
  • 4 lobster tail – split
  • 10 langoustine
  • 10 mussels
  • 10 clams
  • 10 shrimp
  • 10 scallops
  • 2 tablespoon olive oil
  • 4 tablespoon butter
  • 5 cloves garlic finely minced
  • 1 Shallot finely minced
  • 1 cup seafood stock or clam juice
  • cup white wine
  • cup cream
  • 1 pinch saffron
  • 1 tablespoon dill
  • 1 tablespoon parsley
  • 1 teaspoon crushed red pepper
  • lemon wedges
  • ground black pepper
  • salt

Instructions
 

  • INSTRUCTIONS
  • In a 5 quart dutch oven, melt butter with the olive oil.
  • Add garlic and shallot and sauté until onion becomes translucent.
  • Add seafood broth or clam juice, white wine, bay leaf, saffron, plus salt and pepper to taste.
  • Bring liquid to a boil and cook for 5 minutes.
  • Add cream
  • Lower to medium and keep broth at a strong simmer.
  • Add dill and parsley
  • Add salt and ground pepper to taste
  • Add the clams, mussels, langoustine, and lobster and cook for 4 minutes.
  • Add shrimp and cook an additional 4 minutes until clams and mussels have opened and shrimp are pink and opaque and the lobster shell is red meat tender. Adjust lobster cooking time depending on size – the rule of thumb is 1 minute per ounce.
  • Serve Immediately.
  • Serve with crusty garlic bread for soaking up the sauce or serve over rice.
