Langoustine is wild-caught from the cold, clear waters of the North Atlantic, coming from a well-managed and healthy fishery. 

Langoustine is the most valuable shellfish landed in Scotland and over one-third of total world landings are made here. Langoustine is fished by trawlers, using a method known as bottom trawling, with smaller boats operating inshore and larger boats operating in mixed fisheries offshore. A small volume of langoustine, predominantly off the West coast of Scotland, is caught by creel.

The langoustine is a big prawn with an extra-fine taste. It’s also known as the Dublin Bay Prawn or the Norway Lobster, and in its most popular role, as scampi – that’s what we call the meat in the tail once it has been peeled (you’ll find our scampi). But the langoustine is a very beautiful fish and deserves to be admired before it’s eaten. So if that’s where you are, choose these whole raw fish. These are Scottish langoustine. All packs are similar weights so fewer fish (per pack) = larger fish.

Storage

Keep Frozen at -18°C or cooler. Important: If food has thawed, do not refreeze. Defrost thoroughly for a minimum of 8 hours in a refrigerator. Once defrosted use on the same day and do not refreeze. Follow the preparation guidelines above.

Cooking Instructions

Hob
Instructions: HOB 5 mins
Chilled: Place in a saucepan and half cover with boiling water.
Cover and cook gently for 5 minutes.

Cooking Precautions

  • Check food is piping hot throughout before serving.
  • Remove all packaging.
