Southwestern Chipotle Burger with Chipotle Mayonnaise and Pico de Gallo

These southwest chipotle burgers have smoky chipotle flavor and crushed tortilla chips right in the burgers. Topped with guacamole – perfect!

Ingredients
  

  • 8 x 141g Omaha Steaks Burgers
  • 6 x 227g Private Reserve® Angus Burgers
  • 100 g Southwest Chipotle Seasoning
  • 1 Omaha Steaks Burger
  • Omaha Steaks Southwest Chipotle Seasoning to taste
  • 1 whole wheat bun
  • 2 Tbsp. chipotle mayonnaise recipe follows
  • 2 Tbsp. Pico de Gallo recipe follows
  • 1/4 each avocado sliced
  • 1 cup mayonnaise
  • 1 Tbsp. garlic chopped
  • 1 Tbsp. canned chipotle chile in adobo sauce puréed
  • 2 Tbsp. lime juice freshly squeezed
  • 1 tsp. kosher salt
  • 2 cups diced Roma tomatoes 1/4″ pieces
  • ½ cup diced white onion 1/4″ pieces
  • 3 Tbsp. cilantro finely chopped
  • 1 Tbsp. jalapeño minced very fine with the seeds
  • 1 Tbsp. lime juice freshly squeezed
  • 1 tsp. kosher salt
  • Chipotle Mayonnaise:
  • 1 cup mayonnaise
  • 2 tablespoons finely chopped chives
  • 2 minced garlic cloves
  • 2 teaspoons fresh lime juice
  • 1 teaspoon chipotle chile powder or chipotle hot sauce
  • Salt and pepper Kosher Salt
  • Combine all ingredients and mix.
  • Can be stored 1 week in the fridge.
  • Classic Pico de Gallo
  • 1 cup finely chopped white onion about 1 small onion
  • 1 medium jalapeño or serrano pepper ribs and seeds removed, finely chopped (decrease or omit if sensitive to spice, or add another if you love heat)
  • ¼ cup lime juice
  • ¾ teaspoon fine sea salt more to taste
  • 1 ½ pounds ripe red tomatoes about 8 small or 4 large, chopped
  • ½ cup finely chopped fresh cilantro about 1 bunch
  • Combine all ingredients and mix.

Instructions
 

  • Prepare chipotle mayonnaise and pico de gallo.
  • Season burger with Southwest Chipotle Seasoning or your favorite blend.
  • Grill, broil or pan-fry burger until internal temperature reaches 160°F.
  • Slice bun in half and toast on grill or broiler.
  • To make the chipotle mayonnaise, combine all ingredients and mix well. It can be stored for 1 week in refrigerator.
  • Spread 1 tablespoon of chipotle mayonnaise on each half of bun.
  • To make the pico de gallo, combine all ingredients in a mixing bowl and mix well.
  • Place cooked burger on bun and top with pico de gallo and avocado slices. Place remaining bun on top.
